Wu Gencheng, more commonly known by his nickname A Da, makes scallion pancakes in his store in Shanghai, Sept. 22, 2016. For the past 34 years, Wu has been making the delicacy strictly according to traditional techniques in Shanghai, including frying first and then baking slowly. He closed the store for two months in summer and opened again on Sept. 22, attracting many customers to queue for the popular dish. Wu sold scallion pancakes at street stalls and temporary shops before settling down on Maoming South Road 13 years ago.
