As the Lantern Festival is approaching, the glutinous rice balls filled with mature-vinegar have become increasingly popular in the market. There are many mature vinegar big fans in north China’s Shanxi Province.

A variety of food, including glutinous rice balls, cakes and ice-creams is made with mature vinegar in the province.

More than 20 chefs have stepped up the production of mature vinegar glutinous rice balls in Donghu Vinegar Garden on Tuesday.

Orders for the rice balls are increasing, said Li Dingxiang, director of the workshop. “No one was interested in mature vinegar glutinous rice balls at the beginning, but now the daily output is more than 2,600 kilograms, which is still in short supply," he said.
